The Process
Dawn View Extra Virgin Olive Oil is a completely natural product that is produced simply from the fruit of the olive. Gentle processing of the fruit, allows the oil to retain its natural flavour, aroma and many health providing properties. Extra Virgin Olive Oil comprises many healthy active ingredients such as “the better for you” monounsaturated fat, antioxidants, polyphenols and other key vitamins and minerals.
Our processor is a two phase extraction system with a rate of approximately 80 - 100 kg per hour. The fruit is de-leafed and then taken through a mill which breaks up the pit and flesh. The paste then enters the Malaxer and finally the paste is passed through a decanter to separate the oil from the water/paste mix. We do ask kindly that you bring along containers when dropping off your olives as the oil will be directly transferred into these once processed.
Our Extra Virgin Olive Oil is unfiltered, cold pressed, naturally settled and decanted to ensure top quality oil so they can contain small suspended solid remains from the fruit of the olive. After a period of time, these solids will settle down in a natural way to be deposited in the bottom of the packaging.These sediments are completely normal in unfiltered Extra Virgin Olive Oils and they are not indicative, in any case, that the olive oils are damaged. If you do not want to have these remains in your product, simply filter them with a strainer.

Processing Availability
Processing is normally available on the weekends (only during the processing season) and will occur within 12 – 24 hours after harvesting, depending on the size of your batch. If you require processing during the week, please call and we may be able to organise it.
There is a start-up/clean-up fee for all processing customers and a minimum batch requirement of 100 kg’s. For batches smaller than 100kg, please call 0417 09 10 16 as we should be able to help.
Approximate dates you would be harvesting would be greatly appreciated so that we can set a schedule, however we do understand that the weather and other factors are unpredictable so dates may change.
An estimation of total weight, if possible, would also be ideal.
Fees
Start-up/clean-up fee per customer: $ 132.00 (including GST)
Rate per kg: $ 0.66 (including GST)
Minimum batch: 100 kg
Maximum per weekend: 1000 kg.
